Stunning and Pre-Chilling
The automated pre-stunning and pre-chilling system is engineered for high intensity operations on ocean-going processing vessels. After massive catch loading during net hauling, high-efficiency electrical stunning renders crabs unconscious within one second, completely eliminating pre-processing muscle stress and self-mutilationinduced limb loss.Coordinated with precision chilled seawater pre-chilling system at 0~-1°C, it rapidly induces a low-metabolic dormant state in crabs. This blocks the release of stress hormones at the source. It not only greatly improves meat yield in subsequent automated cutting processes, but also perfectly preserves the firm texture and native water-holding capacity of crab meat.
Intelligent Slaughtering and Cutting
The intelligent slaughtering and cutting system adopts AI visual recognition to scan crab size, defects and morphology in milliseconds and dynamically generate precise cutting paths. It automatically carries out shell removal, high-pressure flushing removal of gill and viscera, and accurately splits crabs along the central axis into left and right side crab-leg clusters. High-precision automated cutting tools reduce incision damage and material loss, achieving industry-leading meat yield. Equipped with a modular high speed line and continuous cooker, the system shortens processing cycles, raising daily throughput by over 40 % and reliably sustaining massive catch on processing vessels.
Quick Chilling & Low-Temperature Brine Freezing
After crab-leg clusters complete continuous cooking in an enclosed high-pressure / atmospheric-pressure cooker, products are instantly transferred into a dual-stage high-efficiency RSW chilling tank to rapidly remove core residual heat. This thoroughly prevents tough meat texture, shrinkage and shell-meat adhesion from over-cooking.
Automated Glazing & Packaging
The brine frozen crab-leg clusters are instantly conveyed into a precisely temperature-controlled fresh-water glazing tank, which forms a uniform, dense and transparent ice coating on product surfaces. This effectively isolates ambient air and prevents lipid oxidation as well as dehydration weight loss during long cold chain storage. Dynamic high precision weighing and grading units, cooperated with automatic quantitative packaging and palletizing equipment, deliver substantial gains in operational efficiency.
